In all honesty, I’m not one for baking or eating sweets. I prefer the preparation of making a meal…large or small. But there is something about a muffin for me that fits the bill. Relatively easy to make, anything really goes, and almost (almost) foolproof! I like my ‘sweets’ not too sweet, as I usually eat them with a piping hot cup of strong coffee…I am Italian after all! These are easy, fast, and lend themselves well to a variety of fruits and additions (read…chocolate chips for my kids!)
OATMEAL MUFFINS WITH APPLE, BANANA & HONEY
2 cups all-purpose flower
1 cup rolled oats
1/2 cup wheat germ
Pinch of kosher salt
1 Tbsp. cinnamon
1 tsp. each baking powder and soda
1/3 cup brown sugar
1 nearly bad banana, mashed
2 apples, peeled and grated (I like Fuji apples)
1 cup of sour milk (I add a few shakes of vinegar to it…you can also use buttermilk)
2 eggs
1/2 cup EVOO
2 Tbsp. honey
1 Tbsp. vanilla
Preheat convection oven to 350~.
Into a large mixing bowl, combine all of the dry ingredients, and mix with a fork.
Into a small bowl, add the vinegar to the milk.
Into a medium-sized bowl, mash the banana. Add the eggs, and then beat. Add the rest of the wet ingredients. Mix together, add the shaved apple, and mix again. Add the sour milk and stir.
Add the wet ingredients into the dry ingredients. I don’t finesse the mixing at all. Wet in wet. Dry in dry. Stir together. Doesn’t really matter how, just combine!
If you want to add chocolate chips, now is the time.
Spoon into muffin tin (I don’t grease mine, sometimes I use cups if the kids ask for them). Place in the middle of the oven and cook for approximately 25 minutes, or until a toothpick through the centre comes out dry.
Remove from oven, and place on a baking rack. Allow to cool for 20 minutes and remove from tin! Enjoy!
