Prosciutto-wrapped Chicken Burger with Manchego Cheese

Show me one person, on this planet, who does not enjoy a burger!  Come on, I dare you!  Any topping, thick or thin, single or multiple stack, with our without cheese – absolutely endless!  Burgers are awesome, and a weekly eat around here, and are the quintessential North American BBQ delight.  This one is a perennial favourite…made with ground chicken instead of beef.  Lighter, less fat, and WAY more flavour.  The clincher here is both the crumbled Manchego cheese, and the wonderfully salty prosciutto wrap…keeps the good stuff in, and lets in all the flavour.  You in???

 

PROSCIUTTO-WRAPPED CHICKEN BURGER WITH MANCHEGO CHEESE (makes 4 burgers)

1 pound ground Chicken
2 Tbsp. Plain Yogurt
1/8 cup Manchego Cheese, crumbled
2 Tbsp. Parsley, finely chopped
1 Garlic, minced
Couple pinches of Crushed Red Pepper
1 slice Prosciutto, per burger

 

Turn on BBQ to high and allow approximately  20 minutes to warm up.

 

Into a medium sized bowl, combine the ground chicken, chillies, and yogurt.

Mince garlic, then add to chicken mixture.

Tear apart Manchego cheese into small chunks, then add to chicken mixture.

Finely chop parsley then add to mixture.  Gently combine with hands, and then form 4 hamburgers.

 

Wrap each burger with one large slice of Prosciutto.

Turn down BBQ to medium heat.  Put burgers onto grill.  Cook 10 minutes.  Flip and cook another 10 minutes or so more.  Toast the top & bottom of the bun right at the end of cooking.

To plate, add a little dash of mayonnaise and a good piece of lettuce (arugula is WAY better, but I had none for the shot!) to bun.  Serve with caesar salad, grilled veggies, or garden salad.  Either way, it doesn’t matter, ’cause you’ll be eating the best Chicken Burger on the planet!
