‘Last Dibs Pasta’ with Rapini, Tomato, & Sausage

This is one of my favourite meals to make – ‘Last Dibs Pasta’.  Use up what you have in the fridge, the veggies that are on their last leg, so that you don’t have to throw anything out!  Easy peasy and fast…in the time that it takes to cook sausage and veggies, the water is boiled!  Fast and delicious…how’s that for a mid-week meal after work???



3 Large Tomatoes, use a variety, rinse and rough chop (works out to about 5 cups or so)
Half a Head of Rapini, rinsed & chopped into 1 inch pieces (bottom inch removed)
1/2 cup Fresh Basil
3 Large Sausage, casing removed
1 Small Onion, diced
3 Cloves of Garlic, minced
Kosher Salt & Fresh Pepper
Fresh grated Parmesan
EVOO for sautéing, and again for drizzling on finished batch of pasta
Chopped Fresh Basil, for topping


Fill large stock pot with water and a few pinches of Kosher salt.  Bring the water to a boil over high heat.


Chop tomato into chunks (approximately 1 inch cubes or so).  Set aside.


Squeeze sausage out of the casings and saute in a large frying pan.  Cook over medium high heat until browned, about 15 minutes.


Once cooked, remove sausage from frying pan with a slotted spoon and set aside.  Keep drippings and pan.

Add chopped onion and minced garlic to frying pan with drippings from cooked sausage.  Saute over medium high heat for approximately 5 minutes, or until onions are transparent,


At this point the water should be boiling.  Add noodles of choice!


Once the onion & garlic is cooked, add the chopped rapini and saute until wilted, about 5 minutes.


Add into the frying pan the chopped tomatoes first,  and then the reserved sausage.  Cook until tomatoes are slightly softened, about 5 minutes.  Add Kosher salt & fresh pepper to taste.

Drain pasta once boiled.  Mix the pasta and the veg/sausage together into a serving bowl.  Drizzle with EVOO.  Add chopped fresh basil, and lots of fresh Parmesan.  Re-season with S & P if necessary!  Enjoy the easy deliciousness!!!
